Baigan Bharta

Baigan bharta is typically Kathiyawadi sabji or curry made from big brinjals/Eggplant.

Ingredients
2 big Brinjals
washed it punch with knife or fork on it n spread cooking oil on surface.
Roast direct on gas flame till skin  get burn.
Cool it down n remove burned skin n mash with potato masher.

1 med size chopped Onion
1 med size chopped tomato
2 tab sp chopped green bell pepper
2 tab sp chopped spring onion

1 bay leaf
2 tab sp oil
1/2 tsp mustard seeds
1/2 tsp cumin seeds
Pinch of hing
1/2 tsp Garlic paste
1/2 tsp Ginger paste
1/2 tsp Green chilly paste
salt to taste
1/2 tsp turmeric powder
1/2 tsp Red chilly powder
1 tsp coriander powder
1/4 tsp Garam masala powder
Coriander leaves for garnish

Heat oil in pan sputter Mustard n Cumin seeds add Hing n bay leaf.
Add chopped Onion cook 2 min.
Add chopped bell pepper n tomato.
Cook 2 mins.
Add seasoning mix well. Cook till oil leave the corner.
Now add mashed roasted brinjal.
Cook for 5 to 7 mins.
Garnish with spring Onion n coriander leaves.

Serve with Bajra Roti n white butter.
