Street food Menu.
Plain Aloo- Tikki with White peas Ragda Gravy. N Sweet-tangy tarmarid Chuteny, spicy green Chuteny. Onions n Sev.
Ingredients:
1 bowl soaked white peas for overnight.
Next day drain it n boil it .
Skin come over after boiled so remove it n mashed lightely.
1 bowl boiled n mashed potatoes
For Ragda:
Tomato puree of 1 big tomato or take grated 1 big tomato.
Heat 2 sp oil in vessel spluttering 1/4 sp Mustard seeds add tomato puree cook for 2 to 3 min.
Add 1 tab sp chhole masala I used Everest
1 sp red chilly powder
Salt to taste
1/4 sp turmeric powder
1 sp jaggery
Mix well all that after 2 mins add boiled n mashed white peas.
Cook for 5 to 7 mins.
For Patties:
Boiled n mashed potatoes
Add salt to taste
1/4 tsp red chilly powder
Pinch of turmeric powder
2 tab sp rice flour
Add all ingredients n mix well make smooth dough.
Make small balls from that n shallow fry it both sides.
For Tarmarid Chuteny:
1 cup date
1 cup Jaggery
1/2 cup tarmarid
Pressure cook for 2 whistle with adding 1 cup water.
Cool it churn it make smooth pulp.
Add 1/2 tsp Red chilly powder
1/2 tsp salt
1/4 tsp Rock salt
1/4 tsp cumin Powder
Boil for 5 min. After cooling store it.
For Green Chuteny:
1 bowl chopped coriander
2 green chilies
1 tab sp Mint leaves
Salt to taste
1/4 tsp Lemon juice
Churn it.
Take dish put Patty,Ragda, Chuteny, onions n Sev.
