UNDHIYU BAKED

Baked Undhiyu

Ingredients:

300 gm clean n peel papdi
5 potatoes peel n put cut
4 brinjal put cut
200 gm purple yam cut in 2 inch pieces
2 to 3 partly ripe banana half cut

For masala:
5 sp roasted peanut powder
2 sp Dalia powder
1 1/2 sp garlic paste
2 sp ginger paste
1 1/2 sp green chilly paste
Salt to taste
1 sp turmeric powder
1 sp red chilly powder
2 1/2 sp coriander powder
3 sp grated coconut
1 sp sugar
1 1/2 sp crushed Ajvain
2 sp sesame seeds
1 cup finely chopped coriander leaves
1 cup finely chopped green garlic
3 to 4 tab sp oil

In pressure cooker boil 500 ml water add wash papdi n yam pieces.
Mix Masala well stuff in potatoes n brinjal.
Add 2 tab sp masala in papdi mixture add 3 sp oil.
Keep 3 sp masala to stuff for bananas. Stuffed bananas cook in another pan for 10 mins n keep aside.
Now add stuffed potatoes n brinjal cover with lid n cook for 2 whistle.
For muthiya.
1 small bowl chopped n wash methi leaves
1 bowl wheat flour
1/3 bowl jwar flour
1 sp chilly paste
1 sp ginger paste
Salt to taste
Pinch of turmeric powder
2 t sp finely chopped coriander leaves
2 t sp finely chopped green garlic
1/4 t sp Ajvain
3 sp oil
Mix all ingredients in flours make dough for muthiya.
Make marble size balls n deep fry till brown.
Take big vessel pour that boiled vegetables fm cooker.  First when u open cooker keep brinjal aside. add muthiya n add 1 cup water..
Lightly mix well now add brinjal n bananas on top.
Prehaet oven on 100 degree bake Undhiyu for 25 to 30 mins.
