Mexican Rice

Mexican Rice
My very favourite dish n love to make coz all family members like to eat. N its take less time. Happy coz made with fully vegetabels n colourful  so no one say No for this dish
Recipe for Mexican Rice
200 Gm Basmati rice Washed n soak for  30 min
250 gm boiled vegetables ( peas, carrot, french beans n corn)
3 colour capcicum each 1 tbsp
1 sp ginger paste
1 sp green chilly paste
1 tbsp chopped jalapeño
2 cube veg stock (maggie)
1 chopped onion
1 tbsp chopped Garlic
1 chopped Tomato
1 tbsp red chilly paste
3 tbsp oil
1/2 sp black pepper powder
Salt to taste
500 ml water
Heat oil in pan/wok add onion+ginger+green chilly paste+garlic+pepper powder+red chilly paste+salt n cook for 2 to 3 min. Add jalapeño+tomatoes+ red n yellow capcicum mix well.
Add boiled vegetables cook for 2 min. Off gas.
Take Microsafe big bowl warm water in it add veg stock n mix well.
Add soked rice n vegetable mixture in bowl cook on high power for 13 mins.
Meanwhile stir it tow or three time. After 13 min cover with Microsafe dish n cook for 2 min.
Rest for 5 min n ready ti serve.
